Beef and Broccoli

Ingredients:
1/4 wheat flour
1 (10 1/2 ounce) can beef broth
2 packets Splenda
2 tablespoons low sodium soy sauce
1 pound boneless round steak, cut into bite size pieces
1/8 tsp ground ginger
1 clove garlic, minced
4 cups chopped fresh broccoli (or frozen broccoli, thawed)

Directions:
1. In a small bowl, combine flour, broth, Splenda, and soy sauce. Stir until sugar and flour are dissolved.
2. In a large skillet or wok over high heat, cook and stir beef 2-4 minutes, or until browned. Stir in broth mixture, ginger, garlic, and broccoli. Bring to a boil, then reduce heat. Simmer 5 to 10 minutes, or until sauce thickens.

Angie’s Delicious Turkey Meatloaf

Ingredients:
2 pounds extra lean ground turkey
3 slices whole grain bread
6 egg whites
1/4 cup BBQ sauce
1/2 cup ketchup (without high fructose corn syrup)
1/4 tsp pepper
2 tbsp dried minced onion
1/2 tbsp BBQ seasoning
1/4 tsp garlic powder
2 tbsp Worcestershire sauce
1/4 tsp liquid smoke

Directions:
Mix egg whites and bread crumbs, let sit for 5 minutes. Mix remaining ingredients together. Add egg white and bread mixture to the meat mixture and mix well. If possible, let marinate for 2 – 3 hours before baking.
Form into a loaf and place in a 9×13 baking dish.
Bake at 350 degrees for 1 hour or until center is no longer pink.
